Congratulations to our Brooke Adey who was last night awarded the national ‘Young Waiter of the Year’ Award in the Electrolux Appetite for Excellence program. It is Australia’s only national hospitality awards program that recognises and awards talented chefs, waiters and restaurateurs who are the next generation of industry leaders. We’re proud of you Brooke!

The Gourmet Traveller WINE ‘Wine List of the Year Awards’ were held on Monday July 27 and we picked up 4 prestigious accolades:
– Australia’s Best Wine List
– NSW Best Wine List
– Best City Wine List and
– The Judy Hirst Award for the Sommelier Responsible for the Winning List (Nick Hildebrandt).
A huge THANK YOU to our amazing staff who we couldn’t do any of this without, and to Gourmet Traveller WINE for the recognition.
“Once again, Hildebrandt’s exciting, impeccably balanced list has embraced the new and the daring without ignoring the established and the classic while finding sympathy with Savage’s innovative and individualistic cooking. The pair have also dazzled on different platforms at Monopole and Yellow.”

From 19 to 21 June, Brent and Nick will be escaping to ultra-luxury resort, One&Only Hayman Island in the Whitsundays, for a weekend of fabulous food and wine experiences. Together with the island chefs, we’ll be presenting a Monopole casual dinner on the Friday evening, a Bentley-inspired dinner on the Saturday night with some Yellow touches at breakfast. Nick will work with Perrier-Jouët to create a Champagne masterclass on Saturday afternoon. To book your gourmet getaway, go to:
